Method
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium bowl, combine the cottage cheese, egg, flour, baking powder, and salt. Stir until a sticky dough forms.
Lightly dust a clean surface with flour and turn the dough onto it. Divide the dough into 4 equal portions and shape each into a ball.
Use your thumb to poke a hole in the center of each ball, then gently stretch and shape it into a bagel shape, about 3 inches in diameter.
Place the bagels on the prepared baking sheet. Sprinkle the tops with sesame seeds or everything bagel seasoning, if desired.
Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
Let the bagels cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
