  • 1 1/2 cups full-fat cottage cheese
  • 1 large egg at room temperature
  • 3/4 cup all-purpose flour plus extra for dusting
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sesame seeds optional
  • 1 tbsp everything bagel seasoning optional

Method

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the cottage cheese, egg, flour, baking powder, and salt. Stir until a sticky dough forms.
  3. Lightly dust a clean surface with flour and turn the dough onto it. Divide the dough into 4 equal portions and shape each into a ball.
  4. Use your thumb to poke a hole in the center of each ball, then gently stretch and shape it into a bagel shape, about 3 inches in diameter.
  5. Place the bagels on the prepared baking sheet. Sprinkle the tops with sesame seeds or everything bagel seasoning, if desired.
  6. Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
  7. Let the bagels cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
